The earth's has a large capacity to generate hydrocarbon. It is a very slow process and most fields that are discovered are at least 10 million years old. What will be gone one day is all available and extractable oil. The earth never stops making oil- but it requires millions of years. You can think of the earth's process of making oil like making a cake. You need ingredients (deposited organic material), a sealed container (confinement), temperature and millions of years to cook it to perfection. The oft heard quote that one day we will run out of oil is essentially true, as we do not have millions of years to wait until the earth get around to making new oil.
