I say do a iPod total restore. That should solve any problems.
No don't restore it. Hold the menu button and the sleep/wake button until the APPLE logo shows up. Let it reboot. That should do it. PS: I just did this

There is no such thing as 'installing' an iPod Touch.
This I am not sure about but I think that when you install it iTunes is not able to restore the iPod touch, you have to manually reformat and install the iPod Touch OS which is tricky and usertain weather it will work.
