I believe the problem is the source of the lyrics. Some lyric websites use odd fonts that the iPod does not support. Here's the solution that I've found that works 100% for me.
Go to the lyrics on iTunes (the one that won't display on your iPod), highlight the lyrics and copy them. Open a new Words (or similar) page and paste the lyrics onto the page. (A good time to do a spell check!) Highlight the lyrics and change the lyric font to "courier." Copy the "courier" font lyrics, go back to iTunes, delete the old lyrics, and replace with the "courier" font lyrics. Re-sync your iPod and the lyrics should now display.
You can get lyrics online with your iPod touch but only if you have Wifi.

If you have an iPod with click wheel i.e. iPod Classic, iPod Nano, 5G iPod and such all you have to do is start playing a song, then in the now playing screen press the center button until you see the lyrics. If you have the iPod touch however simply play a song and on the now playing screen touch the center screen and the lyrics show up.
