Make sure that the motor oil is not mixing with the antifreeze. That would give you that gray exhaust you're referring too. If the oil is milky, then you need a head gasket job.

The black gunk that comes out of the exhaust pipe when starting the car is probably carbon buildup within the exhaust system. Carbon buildup happens when the engine is not burning fuel as efficiently as it can.
If it is only at the start of the day and disappears shortly after startup, it is just condensation in the exhaust that is burning off. Pretty normal, especially in cold or rainy weather.
