Does the computer also say low coolant. On start-up mine did that so I'm pretty sure it does that to make sure you check that the coolant level is ok. If coolant level is good then the thermostat is probably stuck open.

Running it for long amounts of time, being in a dry environment, not having an intercooler, or any combination of the three.

I suspect is is overheating for the same reason mine is. The coolant temperature sensor is bad. I jumped to gap between the terminals on mine for a second, and my fan started running. I haven't heard the fan on mine running in quite a while. I don't like to throw parts at machines, especially at other people's expense, but if your fan doesn't work, it would overheat.
I had an intermittent problem with my LS, where all of the sudden, the temp would sky rocket and the on board computer would reduce engine power. It happened three time and each time, I pulled over, shut the car off for about ten minutes then started on my way again, with no problem. Finally, I bought pre-mixed antifreeze/coolant and filled the reservoir to the top. Have not had a problem since.
The radiator fan is not working,or not working properly,or possibly the thermostat is bad.But,usually if the thermostat is bad the engine would still overheat even if you speed up,so I would suggest testing the radiator cooling fans.
Friction
Nothing provided the engine is not started up. With no oil, a running engine would eventually seize up.
Check for low coolant level.
Debris in the hoses or reservoir could cause the motor to overheat. Also, running the pump without fluid could do the same.
