Plants and animals adapt to there surrounding i.e. a cactus couldn't live in the arctic because it has adapted to living in deserts where its spines collect all its water, so it doesn't dry out. Same with animals, hippos have adapted so their nostrils are on top of their noses so they can breath while swimming. I hope that answers your question. :)
Because if they don't, they'll simply die. If you want to know how, it's through Natural Selection (Darwinian theory) of the bad individuals being ruled out and only the strong portion of the specie will survive and create off springs which also carries their genetic code.
If they don't and the climate changes they will die out. So if they want to survive they have to adapt.
