Your skin has salt on it. They can taste the salt. They need a salt /mineral block. They can also smell the remaining smells of food or plants if you have been gardening or mowing the lawn. They think that you are bringing them some delicacies or treats.

There is a lot of reasons for hair-chewin' rabbits.

1. You might have put a shampoo in your hair and the rabbit thought it was a fruit because of its lovely scent.

2. Sometimes rabbits don't like certain things. (My rabbit doesn't like really soft things like fleece.) They will try to make it go away by pushing it with its front paws, or taking it into its mouth and moving it somewhere else.

Those two reasons are the two most common reasons. Or..... they just like your hair in there mouth!

Chewing their tails is not a normal behaviour of rabbits. A little nibble now and then might just be grooming -- if the rabbit is licking itself all over, not just on the tail, and nibbling now and again various parts of its body, that's normal grooming. But focusing just on the tail, or really chewing on its own tail, are not normal behaviours. The reason why a rabbit might do this can't be known without looking for other abnormal behaviours, or other signs and symptoms of disease. Possibly the rabbit's tail is injured, or the rabbit has parasites, or the rabbit is very very bored, or something else. See the related questions below about rabbit health and vet care.
