Normal capacity for a Chevy 350 is 5 quarts. A deep sump oil pan would increase the capacity to 6 quarts or more. Other things can also increase capacity like a larger oil filter or an external oil cooler, given neither one of those would likely increase capacity by a full quart.
Depending on the year ... 1994-2006 Chevy 4.3L engines require 4.5 quarts of oil 1993 and prior Chevy 4.3L engines require 4.0 quarts of oil And if you have a newer model year (2007-up), I would think 4.5 quarts, but check your owner's manual to confirm.
