He wouldn't. He does not put himself in any danger by helping Romeo and Juliet, because he makes sure that nobody knows about it. Even when he is called upon to marry Juliet to Paris, he still does not stay anything, even though he cannot perform the marriage without being an accessory to bigamy. Fortunately Juliet gives him an out by agreeing to fake her death, so that nobody need know about the friar's involvement.
We see the friar's cowardice in the last scene. He says to Juliet, "Stay not to question, for the watch is coming. Come, go, good Juliet. I dare no longer stay." If he is found there he will be obliged to make some explanation. Juliet replies, "Go, get thee hence, for I will not away." And he does. To save himself, he abandons a teenage girl in a suicidal mood, and lets her die.
