Because the SpongeBob books are usually written by completely different people than the crew that actually works on the show. A lot of the time, a SpongeBob book is based off of an episode, and rarely, an episode is loosely based off of a SpongeBob book. The reason an Easter episode has not been made is probably because it would be a bit cliche, and Easter is a very Christian holiday.
