Yes, the vehicle should still work without a thermostat. Howeve, the enigine will take much longer to reach its normal oprating temperature.

Yes a thermostat will cause any vehicle to over heat, just go to local parts dealer and get thermostat and replace it and if that does not work take to SAE trained professional techination.
Should be 180 degrees, some work better with 160. The 180 will allow the vehicle to run cooler.

Technically, yes they can run without a thermostat. (not without coolant, just no thermostat) However, several things will happen. First, the engine will be cold all the time which will make it use more gas. Also, your heater will not work. Another thing is that your engine will not produce as much power because it's cold. etc. note: if this is being done to fix a problem like overheating, it will only work if the problem is caused by a faulty thermostat.
