The two sides would generally line up and charge at each other. They would fight hand to hand until so many were dead that one side won. If there was a castle the opposing army would attack the walls of the castle in various ways until the walls were breached.

well, during the night yes, obviously. but during the day many areas of a castle would have been fairly well lit by natural sunlight entering through windows or simply areas of the castle that didn't have a roof. Other, more secure places such as a dungeon or maybe a storage room for weapons or resources probably were fairly dark at all times of the day and you would have needed torches to illuminate them.
I think that the Keep in a Motte and Bailey castle is the building in the centre or the castle. Becaus if you take a Square keep castle the building in the middle (the castle) is square so it gives off the impression that it is the keep.actually a keep is a place were the king and his soldiers would hide when there in a battles (mostly with the Anglo Saxons)
Personally I would make it out of card board. It could include round towers which could be made out of toilet roll. REMEMBER: A concentric castle needs an outer wall and the castle goes in the middle. The outer wall is to give the castle more protection. Try not to make it a fairy-tale castle and more of a historic castle made out of stone.
