Sounds like the main jet inside the bowl of the carburetors may be clogged gas tank must be removed, the fuel lines must be changed, and the carbs will need to be taken apart according to the service manual and have all worn parts replaced and reassembled There is a strong chance that the gas tank have some rust developing in it and you will need to either get a new one or have that one treated The reason your bike is able to idle is because the pilot jet is is experiencing a draw from the air fuel mixture circuit and it will do nothing but idle. If you pull the choke chances are that the bike will run, but this is obviously not good for the bike.
This sounds like the TPS throttle position sensor. Mine also cuts out at 2,000rmp for a split sec and then clears up, it also idles up and down slightly between 800-1000. It's not bad enough for me to change it yet but this is what I was told.

The Start/Stop switch just change it and it will work just like new.

It could be the IAC (idle air control) motor being dead. Labor and parts cost $250 out the door in the Bay Area of California.
Intake manifold air leak or you need to put some fuel injector cleaner in. Did you gap your plugs correctly?
Probably because the compressor is cycling on and off to maintain temperature without freezing. Compressor on car runs slower RPM, compreesor cuts out and RPMs go up.
to fix that problem with it cutting out let it warm up a little bit before like 30 40 seconds or so and then barrely pull in on the throttle and then just give it more throttle steadly and after that it should be ok

It happens in my grand cherokee. somone told me its a loose ball joint in your transmission. A: IF THIS CONDITIONS OCCURS WHEN THE ACCELERATOR IS IN ONE POSITION (STEADY THROTTLE) THE PROBLEM IS MOST LIKELY TO BE A DEFECTIVE THROTTLE POSITION SENSOR.
