It's alright as long as the temperature of the air outside does not fall below freezing. Most cars have a 50/50 mix of antifreeze/water anyways. If the temperature does fall below freezing and all you have in the coolant system is water, it will cause a lot of damage to the engine and coolant system (it will freeze and expand, tearing hoses and could potentially damage internal components of your engine, such as the head gasket).

You make sure to let it thaw out before you drive it. The real risk is that it won't thaw out, then, when the thermostat opens, there'll be nothing to go through and cool the engine down. Water is actually a better coolant and has better heat transfer properties.. however, it doesn't function well as an antifreeze, and also lacks the necessary lubricants for the water pump. You should probably go get a coolant flush done and get proper coolant that's rated to -34.

If you use more water than coolant, then your car isn't protected against freezing conditions to as low of a temperature as the container may indicate. Also there is a possibility of rusting if you use only water (I've been told).

I assume you want to change out the water pump and would like to know if you can do it without draining the radiator. You will lose approximately all the coolant in the radiator reservoir when you remove the radiator hose from the water pump. If the coolant is in good, clean condition, it might be wise to drain the radiator into a container and re-use the coolant.
