One possible solution would be that you didn't bleed all the air from the cooling system after replacing the thermostat. The coolant temperature switch is located next to the air bleed valve for the cooling system at the top of the engine. When the cooling system gets air locked(not bled)there is no water passing through the system. Attach a clear plastic hose to the bleed valve, place the other end in the radiator reserviour, open the valve and monitor the fluid and air bubbles through the hose until the fluid runs clear. You may have to bleed the system several times as air is trapped throughout the system and driving will cause the air to eventually move to the top of the engine. As for the oil light. Does the light stay on all the time or only at low idle rpm. I'm sure that you have checked the oil level to see if it is full. The oil pressure sending unit may need to be replaced. Can you check the oil pressure with a mechanical gauge to see if it is correct. The 2.7l engine should have 7.5 psi pressure at idle after warm up.

The first thing to check is what is the pressure at idle with the engine warm. You will need to instal a manual gauge. If it is above 15 psi, it is an electrical/sensor issue. If it is below 15, it is an internal engine issue.
