The new sensor could be stuck. Or the wiring could be loose, or the coolant could actually be low. Check the coolant level and the sensor wiring first.
Sensor, wiring, or computer. Those are your three options.

I just worked on one of those this week, same symptoms. It also had a check engine light on, read the codes, came up with code 15, coolant temperature sensor/circuit fault, replaced the coolant temp sensor and all is well. Cheap fix for $15.

Check your cooling fans in front of the radiator. It could be a relay or fuse to your high speed fan motor. Also, check your coolant temp sensor, antifreeze level, and or thermostat again.

From my little knowledge, the coolant temp sensors is on the bottom of radiator. I have a 95 Camry and recently replaced the radiator and thermostat and my car still overheats. My next project is a temp sensor. This sensor tells the radiator fan when to come on. Generally at about half temp the sensor tells the fan to come on. It has green connector and facing up. Air thermo sensor is inside airflow meter housing. Additional:Remove the 2 wire connector lead. If the fans start up immediately, the temp fan switch is faulty.If you measure the sensor, using a multimeter on ohms, it will read around 0.5 ohms. Put the sensor into boiling water and measure the sensor again. It will only have risen to around 2.5 to 3.0 ohms. This confirms that it is unserviceable.
