It is possible that the coolant mixture is not correct- that can make a car run hot.
It is possible for the water pump to go out. Also it is possible to be having a problem with the radiator fan.
high resistance coolant temperature sensor, is it overheating, air in coolant pipe at sensor, or bad sensor,
Only if the sensor is malfunctioning.
There are two separate sensors that play here. the "coolant temperature sensor" and "coolant LEVEL sensor". I suggest confirming which of these was replaced, as it is very common for them to be confused. likely you will find the coolant sensor that was replaced was the one on the engine (temperature); The LEVEL sensor is mounted either in the coolant resivoir or in the radiator. Probably just need the proper sensor replaced.
Coolant is fluid that flows through a device in a vehicle to prevent overheating, The coolant level sensor is located on the bottom side of the coolant recovery tank.
Protects, no. The only temp sensor is the coolant temp sensor. The car will run until the engine is ruined if allowed to continue overheating.

If it's overheating, it cold be thermostat, radiator or possibly other problems. If it's not overheating it could be the coolant level sensor.
It is a two wire sensor next to where the upper radiator hose attaches to the engine.
One of the most common issues related to overheating on the s-series is a malfunctioning engine coolant temp sensor.
The coolant temp sensor is the two wire sensor located near to where the upper radiator hose hooks to the engine.
First off, check your engine coolant tank. If it's low, then that's the problem. Put more coolant in. If it's at the correct level, then look to see if there's gunk buildup. Second, is your engine overheating? If the engine is not overheating, and there is gunk buildup in the coolant tank, then you may just need to clean the sensor. If there is no gunk in your tank, your coolant level is fine, and your engine is not overheating, then it may be a bad sensor, and you need to replace it.
