The most likely reason is that it is being burned, there is also the possibility that a joint or some pipework is loose and leaking. This would cause you to lose oil when the engine is running and warmed up. Check for tell tale signs of leaking around the engine.

Check again for "leaks or smoke". If you are using one and a quarter gallons of oil a week, it is either leaking or burning off the oil, and I suspect leaking. Those are the only two rational explanations.
