Seriously, though, you could always ask her about it. Try to have an open discussion. I'm assuming you're young, so your relationship probably isn't going to be the kind that lasts forever. Statistically speaking, of course. Either find out the level of "purity" that she's confining herself to, and respect her wishes, or tell her your feelings about the issue and leave her if you think that your relationship has nowhere to go. Who knows? It might just be a stupid little passing fancy that really has no meaning to her - like a little trinket or something. But don't put either yourself or someone you care about (at the moment) through drama and BS that you can easily avoid. If it's not going to work out, you could always still be friends, and see if your respective roads lead you back to a relationship in the future.

I have a friend who has a ring with her birthstone in it that she wears as hers and I also have friends that have ones that say "true love waits" on them and stuff like that.
