Ingredients

  • 1 1/2 c All-purpose flour, sifted
  • 2 ts Baking powder
  • 1/2 ts Baking soda
  • 1/2 ts Salt
  • 1 ts Cinnamon
  • 1/4 ts Nutmeg
  • 1/8 ts Allspice
  • 1 1/2 c Wheat cereal flakes, crushed
  • 1 c Walnuts, coarsely chopped
  • 1/4 c Apple, chopped
  • 1 Egg, slightly beaten
  • 1/4 c Brown sugar, firmly packed
  • 2 ts Vegetable oil
  • 1 1/2 c Buttermilk, lowfat

Grease or spray 9x5x3 in. loaf pan. Preheat oven to 350F. Mix and sift flour, baking powder, baking soda, salt and spices into bowl. Stir in cereal, walnuts and apple. Combine egg, brown sugar, buttermilk and oil; add to dry mixture. Stir just enough to moisten dry ingredients. Do not beat. Spoon into pan. Bake at 350F one hour or until toothpick inserted into center comes out clean. Makes 1 loaf. Pat Empson 05/20 08:11 pm

  • 1 1/2 cups all-purpose flour
  • 3/4 teaspoon ground cinnamon
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon ground nutmeg
  • 2 eggs beaten
  • 1 cup sugar
  • 3/4 cup mashed strawberries or raspberries {about 1 1/2
  • cups whole berries} 1/2 cup mashed ripe banana
  • 1/4 cup cooking oil
  • 1 1/2 teaspoons finely shredded orange peel
  • 1 cup chopped walnuts
  • In a bowl, combine flour, cinnamon, baking soda, nutmeg, and 1/4 teaspoon salt. In another bowl, stir together eggs, sugar, mashed berries, banana, oil, and orange peel. Add to flour mixture, stirring just till combined. Stir in nuts. Pour into a greased 9 x 5 x 3 inch loaf pan. Bake in a 350 degree oven for 60 to 70 minutes or till a toothpick inserted near the center comes out clean. Cool 10 minutes. Remove from pan; cool on a rack. Wrap and store overnight. *Makes 1 loaf*

BLUEBERRY-BANANA-WALNUT BREAD Prepare as above, except omit strawberries or raspberries and stir in 1 cup fresh or frozen WHOLE blueberries with the nuts.

  • 1 10-oz. package frozen
  • strawberries, in syrup, - thawed, undrained 2 Eggs
  • 3/4 c Oil
  • 1 1/2 c All-purpose flour
  • 1 c Sugar
  • 1 ts Cinnamon
  • 1/2 ts Baking soda

Preheat oven to 325-degrees F. Puree strawberries in blender or processor. Combine eggs and oil in small bowl and wisk thoroughly. Sift remaining ingredients into large bowl. Make well in center. Pour in eggs and puree and blend well using wooden spoon. Pour into 9x5-inch loaf pan. Bake until tester inserted in center comes out clean. About 1 hour and 10 minues. Cool.

  • 1 cup whole-wheat flour
  • 1/2 cup white flour, unbleached
  • 1/3 cup wheat germ
  • 1 teaspoon baking soda
  • 2 teaspoon salt 1/2 c unsalted butter, softened
  • 3/4 cup light brown sugar, firmly packed
  • 1 each egg
  • 1/4 cup banana, extra-ripe mashed (about 3)
  • 1/4 cup yogurt, plain

Preheat oven to 350'F. Coat inside of 9x5 inch loaf pan

with nonstick vegetable-oil cooking spray. Stir

together whole-wheat flour, white flour, wheat germ,

baking soda and salt in small bowl until well mixed.

Beat together margarine and sugar in medium-size

bowl until light and fluffy. Beat in egg. Stir

together banana and yogurt in another bowl until well

blended. Mix the banana mixture alternately with the

flour mixture, in batches, into the margarine mixture;

stir just until combined. Spread the batter in the

prepared pan.

Bake in preheated 350'F. oven 60-65 minutes or

until wooden pick inserted in center comes out clean.

Cool in pan on wire rack 10 minutes. Remove bread

from pan to wire rack to cool to room temperature.
