Bruschetta with Goat Cheese
Ingredients:
Olive oil
2 bell peppers (red, yellow or green)
1 tablespoon capers
Fresh basil leaves
Salt
Black pepper
Baguette or Italian Bread
Goat cheese
2 Garlic cloves
Directions:
Preheat the oven to 375 degrees F.
1. Heat 2-3 tablespoons of olive oil in a pan over medium-high heat. Add the peppers and cook until soft, about 15 minutes.
2. Add the capers, basil, salt and pepper.
3. Slice the bread into thin slices. Brush the bread lightly with olive oil. Arrange on a sheet pan and toast in the oven until lightly browned about 10 minutes.
4. Slice garlic clove in half. When warm bread comes out of the oven, gently rub the side of the garlic clove on the bread.
