  • 3/4 c Strong coffee freshly
  • . brewed

Cut off a strip of fat from the outside rim of the ham, leaving a portion of the fat intact. Cut the strip of fat into small cubes. Using a sharp knife, cut the fat remaining on the ham at intervals down to the meat. Put the cubed fat into a skillet, preferably of black cast iron, and cook, stirring, until the fat is rendered. Scoop out and discard the rendered pieces of fat. Add the ham slice to the skillet and fry until nicely browned on one side. Turn the slice and continue frying until brown and cooked through. : I Remove the ham slice. Pour the coffee into the slcillet and cook, stirring, about 1 minute. Cut the ham slice into 2 to 4 pieces and serve the gravy on the side, to be poured over grits and/or spooned over the ham pieces.

What kind of food is served in the Appalachian Mountain region?

There can be any food eaten in the Appalachian Mountains, but the foods most served and enjoyed are home-cooked and in a great many cases, home-grown. A typical supper would be, for example, fried chicken, fried or mashed potatoes, biscuits, sliced tomatoes, pinto beans, and gravy. All homemade, of course. Favorite foods served for breakfast would be biscuits and gravy, scrambled, fried, or "runny" eggs, fried country ham, bacon and/or sausage, sliced tomatoes, fried potatoes, hot and creamy oatmeal, buttered and sweetened rice, jelly, preserves, jam, honey, or molasses on biscuits. Another favorite meal for supper would be soup beans (pintos) and cornbread with onions.

What is a traditional Po Boy made with?

The most common is a French baguette, fried seafood (oysters, shrimp, crawfish, soft shell crab, etc), mayonnaise(I prefer remoulade sauce), lettuce, tomato, and optional pickles. There are also po-boys with roast beef and gravy, sausage, ham and cheese, or even french fry and gravy varieties. Some places in New Orleans even use cabbage or coleslaw instead of lettuce, but most people outside New Orleans use the term "po-boy" for any fried seafood sub.
