Cut the potatoes in half, then cut into 1/3 inch slices. Get a large bowl and place all the potatoes there. Then, mix the vinegar and the sugar in a small bowl until the sugar dissolves. Then, mix it with the potatoes. Add in the onion, then season to taste with salt. Leave at room temperature to cool. Add the olive oil and parsley on the potatoes then toss until marinated and store for 20 minutes up to 2 hours at room temperature.
