Seitan
Yes. The power of Seitan compels you.
Homemade seitan does not have MSG in it. It is made of wheat gluten along with flavorings such as spices, soy sauce, etc. For commercial seitan products, you should check the ingredients. If it is used, MSG should be listed.

Ingredients1 1/4 lb Raw Seitan(1 box Seitan Quick Mix) 1/4 c Oil for frying3 Strips kombu sea vegetable(2 to 3 strips, about 12 inches) 1 1/2 c B-B-Q sauce of choicePrep time: 1-1/2 to 2 hours (most of time is in cooking) Heat oil in a pan over medium heat and fry Seitan pieces for a few minutes on each side until lightly browned. Soak kombu until soft, then cut into sixteen pieces. Line bottom of 9-inch baking dish with half the kombu. Place a piece of fried Seitan on each piece of kombu, overlapping if necessary, to make an even layer. Place remaining pieces of kombu on top of each piece of Seitan. Pour B-B-Q sauce on top, then spread with a spoon to cover surfaces. Gently add enough water so that the Seitan pieces are almost floating. Cover and bake at 350 F. for one hour. Add more water if necessary to keep Seitan very moist. This recipe has been developed by Bro. Ron Pickarski as part of his work toward being a participant and finalist in the Culinary Olympics held in Frankfurt, Germany.
One can prepare seitan at home by mixing whole wheat flour and water into a dough. The dough should then be covered with cold water and left overnight. Knead the dough until it is more stringy in texture. Put the gluten mixture into a pot of broth and simmer until the broth is gone.

most people talk about boiling seitan or baking it, but who talks about boiling (or pressure cooking) then baking it afterward? If you find a good seitan recipe, spice like smoked ham, and then boil it for about and hour and then bake it you may have found something indeed. When you are baking it (for 30-45 min) make sure to glaze it with honey, liquid smoke, and soy glaze, (and you have to frequently reglaze with a baster, say every 5-10 minutes). And if you really want to go all out, bake it with pineapple rings (although the color is better without them on top). good luck!
