You don't. That will screw up your computer big time. Today's computers are programmed to provide the right fuel mixture at a set engine temperature. If you mess with that by putting in a cooler T stat, the computer will think that the engine hasn't reached operating temperature and will keep giving it a richer mixture. That rich mixture will be burned off in your catalytic converter, raising the internal temps and eventually causing it to fail. That alone is an $800 part.
You're literally playing with fire here. Stick with what the specs call for.
