To replace the shift cable on a 2000 Mercury Sable, first, disconnect the negative battery terminal for safety. Then, remove the console cover to access the shift lever and detach the cable from the lever. Next, follow the cable to the transmission, remove the retaining clip, and pull the cable out. Install the new cable by reversing the process, ensuring it's properly secured at both ends before reassembling the console and reconnecting the battery.
