Essentially, these two trims are the same. Only difference is with the GT's, they come standard with a 3.4L V6 engine. The SE trims can come with the 2.4 I4(inline 4), 2.2 ecotech I4 or the same 3.4L V6. Power wise on the GT's and SE's with the same engine, the GT will put out 5 more horsepower than the I4's solely from the transmission gearings. Body wise, there are three different body's. The GT's have a more aggressive front end with a wider front fascia. And have weather stripping all around. GT's came with sunroof while some SE's did too. Some SE's bodies came with a smooth body while others have a waive side body.
looks like 2 years and 2 letters is the only difference. GT stands for grand touring and SE stands for single exhaust.

I'm unsure if the GT Model is different, but on my 2004 Grand Am SE 1 w/ the 3.4 V6, It cuts it at 106 mph, but on my ex's 2000 SE w/ V6, it was 110~111.
