Usually the intake manifold, exhast manifolds, rocker covers, and anything else that may be bolted to the head itself. Plus any other wiring or sensors. Also don't forget to drain the water, and make sure that you mark the timing marks if it is a 4 cylinder or OHC engine

Call an Auto Zone store and ask for the machanical schematics of the car and also the step by step papers on how to take of and replace the head gasket.
Antifreeze in your oil is symptomatic of a blown head gasket. If your head gasket is blown you may have warped your head ( and possibly cracked it ). The fix for this is to remove the head and take it to a machine shop and to replace it along with a new head gasket.
