Any coolant that meets Ford Specification WSS-M97B51-A1. The two that I use are
Motorcraft VC-7B or Zerex G-05. You want a hybrid organic acid technology (HOAT). There may be others, but remember that a lot of antifreeze brands may say that they recommend that brand, but that's not the same as passing the WSS-M97B51-A1 standard and being Ford approved. That's something to consider if you're car is still under warranty.
SAE 5w20
According to the 1999 Mercury Sable Owner Guide : It came from the factory with a 50 / 50 mix of distilled water and GREEN color antifreeze ( meeting Ford specification ESE-M97B44-A )

For a 2001 Mercury Sable, the cooling system typically requires about 2 to 2.5 gallons of a 50/50 mixture of antifreeze and water. It's important to check the owner's manual for the exact specifications and to ensure proper mixture ratios for optimal performance. Always make sure to use the appropriate type of antifreeze recommended for your vehicle.

There is a fairly new type available at any auto parts store and Wal-Mart that will mix with any other type of antifreeze, red or green. You can use this in any car or truck, old or new.
For a 2003 Mercury Sable, it is recommended to use a low silicate, ethylene glycol-based antifreeze that meets Ford's specifications. The preferred type is a 50/50 mix of antifreeze and distilled water, typically in the form of a coolant labeled as "Ford Motorcraft" or another compatible brand. Always check the owner's manual for specific recommendations and capacity information before refilling or replacing the coolant.
