Aslo, I have found that the sensor requires the "slipperiness" of a proper coolant/water mix...too much water and the sensor will stick. ==New answer headline== Also make sure you are using the right coolant. On my 97, the light will only go off if i use Dex-cool. anything else and it will stay on.
