Normally when your engine is hot, the pressure seals the reservoir off from the radiater / pump / engine loop. Once you turn it off ( and the engine begins to cool ) the pressure is released and the reservoir ( overflow if you will ) drains into the rad / engine. What's happening is you are losing water either from the rad, a hose, or possibly into a cylander and that is creating space - therefore low coolant and your engine gets hot. Idle your engine until it starts to get toasy warm. You should either see a leak as the water sprays out, or if it is going into a cylander you should see smoke ( at least if you have antifreeze instead of pure water in it. Would blow whitish color smoke out the exhaust )
