We don't know exactly what Roman music sounded like, but we do know of their Musical Instruments. The most popular was the water organ in various sizes. There was a giant one in the Colosseum and smaller ones for home use. There was also the lyre, the kithara, various flutes, both single reed and twin reed, tambourines, trumpets in a variety of types, the harp, and percussion instruments like the Egyptian sistrum, castanets and pans, which were something like small gongs.
