There were no more Aztecs left- the Spanish killed them all, because they didn't want to be over-taken by the Aztecs if they rose again. But the only reason the Aztecs lost is because a disease- small pox- had weakened them and so they couldn't have retaliated.

Probably not. There were no horses in the Americas until the Spanish came. I can never remember if the Aztecs were around then, or if it was the Incas or Maya, but after the horses showed up, there's no reason they couldn't eat them.
