If you are assuming that Hermes really existed in human form, his fate must have been closely tied to the other Olympians. For several reasons, I believe he must have moved from Mount Olympus to Egypt. Hermes is a very mysterious and mystical character and he was always appearing and disappearing in the stories of the time. You can read about the story of the fate of the Olympians (and Hermes in particular) in the second book of the Trismegistus series, currently being written.
