There are so many different factors here that I would have to plan for, really. Do we have the luxury of knowing before-hand of just what sort of outbreak this is?

Before I start planning, I'd try to figure out these things:

Fast or slow Zombies?

No pupils or huge pupils?

Do I see any running around without their heads?

Do they know how to use doorknobs, walk up stairs, etc.

Do they travel in packs?

Angry or confused zombies?

Bite-transmitted, digestion-transmitted, or air-transmitted disease?

Are there any "zombie bomb shelters" nearby?

How can I keep zombies at bay?

When I find out as many of these things as possible, I would block any possible entry into the building, at least on the bottom floor until I can figure out my full escape plan.

In case of fast zombies, I'd ditch any uncomfortable footwear I may have on and try to find something more comfy laying around. If not, I'd have to make do.

In case of slow zombies, I don't have to worry just as much.

In case of zombies with small or no pupils, this means they see moreso in the daylight, so nighttime travel (when necessary) would be better.

In case of zombies with huge pupils, this means they can see better in the dark, so it would be more prudent to travel in the day.

If I see any zombies running around just fine without their heads, this means that the infection isn't sprouted in the head. In any case, zombie corpses should be burned entirely or chopped into as many bits as time will allow.

In case of zombies that retain enough brain power to know how doorknobs work... It's time to really worry. I wouldn't stay anywhere for too long.

As a rule, zombies run in packs. It's food-mentality: If one finds food, you all found food. Then again, the undead don't exactly have a pulse, and therefore don't need food for energy... so if you see any stragglers, shoot them where they stand.

In case of angry zombies, keep a safe distance and try not to provoke them. If they come after you, have no mercy.

In case of confused zombies, keep a safe distance and don't anger them or provoke them. If they come near you, they might just be curious, but if they attack, have no mercy.

In case of a bite-transmitted disease, cover as much skin as possible at all available times.

In case of a digestive-transmitted disease, stay away from processed food or organic food (whichever seems to be At Fault) when stocking up on supplies.

In case of air-transmitted disease, wear a breathing mask at all available times.

If there's a "zombie shelter" anywhere nearby that you know of, slowly make your way towards it during safe times. Between travelling, find a safe place for the night and block all entry-ways. If they're sending out a radio signal and you come across a station that you can broadcast from, try to alert them to your arrival.

To keep zombies at bay, keep a dead rat on you at all times to throw in case of emergency (kind of like beef jerky to a guard dog). Try to keep your distance, and if they get too close, utilise any available weapons to try and slow them down. Aim for the head, neck, or knees to try and slow them.
