Nomadic tribesmen became farmers because they developed the needed technology to domesticate crops. By doing this they would no longer need to travel constantly in search of food. They could plant the food they needed, and harvest it just to start the cycle again. This led to the domestication of animals starting with beasts of burden. After this benchmark was made, farming exploded and civilization started forming from large growths in population.

Well farmers for one had a strict diet, with what ever they were growing, this caused not a very helthy nutrietious diet so the foragers were also in a way alot healthier. Secondly if anything happened to the famers crops they were basically screwed since they depended on in earlier societies only a single crop.
