The pretty much managed the whole economy, doing jobs such as messengers, farmers, etc. This is because all the Spartan citizens who were male were serving in the army. Slaves from Athens did work like Spartan slaves, however they could not advance in their job as far as Spartan slaves could. I now that Athens most likely had more slaves due to "capture and control" in which the citizens of a land they conquerd became slaves. Sparta had less because they hated foreigners, thus wanting to limit the amount of slaves they had. They hated foreigners because with new people come new ideas. They were afraid new ideas would change their culture. Also, slaves from Athens could not vote or do anything political. It is unclear to me whether Spartan slaves could enter politics, or if that was left for the elder Spartan citizens. Hope this helps.
