I believe that, when your heart has stopped, you have until your brain stops functioning as well before your body begins the decaying process. I believe this works both ways. If cryogenics are involved- freezing the body tissue- you can survive intact for longer. Eventually, though, even with cryogenics, the body will degenerate without brain and heart function. So basically, once your heart has stopped, you have until your brain runs out of oxygen before you are physically dead. On a similar note, people who have been beheaded can retain brain function for a few minutes at the least, thus being technically alive.
