Two main reasons:-
Firstly to improve on a ground-based photograph. For example, say you photographed a house to advertise it for sale. From the ground or, even a Google Aerial shot is very 'flat' and unflattering. Move the camera off the ground so that you get a bit of an angle and the image immediately becomes more appealing.
Secondly to obtain shots that are either impossible or impractical/too costly. For instance, consider a proposed development for a Property Developer. It wants a view from the future Penthouse, but currently there is a pile of rubble on the ground. A ground or mast-based camera cannot get high enough but a UAV with a camera can fly to the required height and snap away merrily. Similarly, if a building such as a Church let fall some masonry from up high, a steeplejack or Scaffolder could get up there, but a quicker solution could be an aerial craft to fly up and relay inspection images to ground allowing for a rapid damage assessment to be made.

Aerial photographs are prospective projection while maps are orthographic projection
Aerial photography is the act of taking photographs from an elevated position, often a non-ground based structure from which can be acquired by, but not limited to; an Airplane, Helicopter, Remote Controlled Aerial Vehicle, Rocket, Parachute, Hot Air Balloon and much more. Now many photographers are using drones for Aerial photography there are many benefits of using drone photography in each field of business. I am working at singaporeaerialphotography(dot)com as an Aerial photographer. I use drone for photographs.
Aerial maps are visual representations of the Earth's surface created from aerial photographs taken from aircraft or drones. These maps provide detailed information about land use, topography, and vegetation, often used in urban planning, environmental studies, and agriculture. They can be presented in various formats, including 2D images and 3D models, and are valuable for both analysis and navigation.

Most people call them aerial photographs. Intelligence officers call them "overhead" because in the spy business, aerial Photography is called "overhead coverage."
Yes they do.
Maps are two-dimensional representations of the Earth's surface, while aerial photographs are actual images taken from above. Maps can include various types of information such as roads, boundaries, and landmarks, while aerial photographs provide a visual representation of the landscape. Aerial photographs capture details such as vegetation, buildings, and terrain features more realistically than maps. Aerial photographs are usually taken from airplanes or satellites, while maps are created manually or digitally. Maps can be created with different projections and scales, while aerial photographs provide a more accurate depiction of the Earth's surface.
