Really depends on the source of the satellite imagery.
Google for examples purchases or leases its satellite imagery from a number of imagery providers such as GeoEye and DigitalGlobe. Google updates it imagery on Google Earth and Google Maps once or twice a month but not the entire globe at once.
Bing Maps (previously Live Search Maps, Windows Live Maps, Windows Live Local, and Microsoft Virtual Earth) is Microsoft's web mapping service. New updates are released on roughly a monthly basis.
Google acquires imagery from a variety of providers (e.g. DigitalGlobe). Some of the imagery is given to Google by city or state governments.
The age of the imagery varies greatly, but most of the high resolution imagery is between 6 months and 5 years of age. Google regularly updates its images, however, a given area may not be updated in a few years.

In 2006 Google Maps was updated to use the same satellite image database as Google Earth. Before that Google had to update and process imagery for both Google Earth and Google Maps where the maps where often out of sync with each other. Now Google updates its central map & imagery database and the updates are made available to both Google Earth and Google Maps at once. The time between getting imagery from satellite and seeing it on Google Maps is far from real-time. Once the imagery is taken by satellite, it takes time to process the data by a commercial provider like GeoEye before it is available to Google and other customers. Google will do additional processing to convert imagery into the format and coordinate system of its internal databases. This is one reason you normally won't find any imagery younger than about 6 months. For these reasons, the Google map & imagery database is updated once or twice a month.

We send satellites and space probes equipped with cameras into space. The satellites and probes can be sent commands via radio waves, and the equipment then sends back digital photographs via radio as well.

There are two ways, first, Google has satellite imagery which takes high-resolution images of the earth from space, and secondly for more street-level imagery, Google has a special fleet of cars with a large pole extending from the top of the car with cameras mounted on them, the cameras take pictures of the surrounding area as the car drives which can get detail too small for the satellites to get.
