Really depends on the source of the satellite imagery.

Google for examples purchases or leases its satellite imagery from a number of imagery providers such as GeoEye and DigitalGlobe. Google updates it imagery on Google Earth and Google Maps once or twice a month but not the entire globe at once.

Bing Maps (previously Live Search Maps, Windows Live Maps, Windows Live Local, and Microsoft Virtual Earth) is Microsoft's web mapping service. New updates are released on roughly a monthly basis.

Google acquires imagery from a variety of providers (e.g. DigitalGlobe). Some of the imagery is given to Google by city or state governments.

The age of the imagery varies greatly, but most of the high resolution imagery is between 6 months and 5 years of age. Google regularly updates its images, however, a given area may not be updated in a few years.

Google takes its own Street View imagery and decides where and when it takes these photographs.

Global Positioning System (GPS) satellites have different components that are updated on different schedules from every 2 hours to every 6 hours. The almanac is updated every 24 hours.

This is one reason you normally won't find any imagery younger than about 6 months. For these reasons, the Google map & imagery database is updated once or twice a month.
