I am trying to build a LED Light with 10x 1w High Power LEDs -3.6v and 350mA each- and i want to power them with a 12v adapter and I have no knowledge of electronics. Please help me how to do it?

Before we begin, a note: At 3.6 volts and 350 milliamps per LED, this leads to just over one and a quarter watts, not the one watt you specified.
Now, for a 12 volt adapter, each LED would only receive one third of its rated voltage if you wired each LED in series. If you wired them in parallel, you would draw a lot of power, but end up burning out the LEDs with almost 4 times its rated voltage.
You would need to wire 3 of the adapters in series, have the 36 volt output wired to the LEDs in series, dividing by ten, giving you 3.6 volts per LED.

Adapter for what, exactly? You could be trying to install a different buttstock type, Picatinny rails, or a number of other accessories. Other than some sort of unspecified adapter, you really don't tell us what it is you're trying to do.

It depend on what the load of the device that plugs into it is. The mA rating is the maximum amount of amperage that the adapter can produce. The 500 mA adapter will produce about a half amp whereas the 1200 mA adapter outputs 1.2 amps. So one is about three times larger that the other. Check the device that you are trying to power for a mA load and that will tell you whether you can use it on the 500 mA adapter.
