Cinco de Mayo is not a Mexican holiday. It originated in California during the 1860's and is a commemoration of the Battle of Puebla. A simple "Feliz Cinco de Mayo!" will do just fine or "Tenga un feliz Cinco de Mayo!" ("Have a happy 5th of May!")
