Predetermine where you intend to make your colour change. If you want the color to show only in the bathroom when the door is closed - you do not paint the door jamb. If you want the colour to show when the door is open, then paint the jamb, but be careful not to get the bathroom colour on the outside door casings.
As for your choices of colour for the trim… a brown of the same colour family as your tiles, in a dark shade will do nicely, or if you are more adventurous (and have a bit of faux finishing experience) you could paint the trim the same (or very close) colour as the tiles and "dry brush" a metallic copper over the top. It is a bit of extra work, but the result is always worth the effort.
