"Multigrade" is Ilford's trademark for variable-contrast paper.

Black-and-white paper is made in, usually, five contrast grades. Grade 1 is very low-contrast, grade 3 is medium-contrast and grade 5 is high-contrast. Single-grade paper is sensitive to blue light, so you can use a green safelight in your darkroom.

Variable-contrast paper is coated with three emulsion layers, which are sensitive to green light (in addition to blue) in varying amounts. By adjusting the amount of green light you use on your enlarger, you can change the contrast of the image.
