Not sure what you mean by "Pop up", but if you mean a sudden movement to startle it's called a "Blitz" The move to jump to their feet from laying on the back is sometimes as referred to as 'kip up.'
Once you remove the plastic cover over the headlights, you will have either 2 slide up locks, just slide them up unplug the wires and the housing pop's out. Or, 3 clips that with a screw driver just pop open and the assembly pop's out.

To remove the headrest in your 2007 Avalanche, first pull the headrest all the way up. Then, press the seat back all the way down around the neck of the headrest until you see two springs. Using needle-nose pliers, remove the springs. Pull up on the headrest and it should come loose.
Lift up the headrest to the highest position. The metal shafts have plastic rings that are part of the seat. Unscrew the rings counter clockwise around both shafts of the headrest and then pull headrest off.
