The problem with making maps is that maps are flat and the earth isn't. In order to represent a curved surface on a flat surface, things have to be distorted.

The only way to represent the earth's surface accurately in every way is on a globe.

Because of "distortion" which is caused when a curved (three-dimensional) form is reduced to a flat (two-dimensional) representation.

The representation of a spherical globe can be accomplished in many ways, one of which is to slice the surface of the sphere into many thin sections (gores) that are more easily flattened. But this results in a discontinuous flat map. Filling in the missing areas (much more added toward the poles) will distort the true size of areas (polar areas will appear comparatively larger). There are special projections of globes that reduce this distortion. But any equatorial projection cannot show the continuous nature of the polar regions.

Maps of the world can be in different projections, different symbology, show different features or have been made at different times, all reasons which would cause them to look different.

Maps change as more information is gained about the area. A long time ago areas that were unexplored, or contained dangerous barbarians, were simply listed as "here be dragons".
