if you just need the cable and not the cable housing you can reach under the dashboard and feel around behind the speedometer, there should be a retaining clip, just push the clip forward and pull the cable backwards, you may need to remove the gauge cluster if you can't reach it or can't find it, there is a plug in the cable housing that just needs to be pulled out then just use a pair of pliers to pull it out of the housing, if the cable is snapped you need to get under the car and remove the housing from the transmission and pull the second half out that way, to replace just lube up the new cable and slide it in through the tube and twist until it catches in the pinion gear replace the plug and put it back in to the gauge cluster

engine swaps are really quite simple. all you need is the new engine, proper motor mounts, probably a different transmission (the 350 in passenger cars usually is an automatic transmission, i had problems with my 87 camaro sport on this) and if you get really unlucky, you may need to get a different driveline (im not sure if the one in the newer camaro is the proper length, someone else might know). just make sure to get all your electronics connected properly, and you may have a problem with the speedometer unless you get a transmission with an electrical speedometer connection.
for the check engine light go to autozone and they will diagnose your engine for free as for the speedometer you will proobably have to replace the speed sensor
