There are natural and unnatural colors of lightsabers. The regular natural ones are in the movies, besides Mace Windu's lightsaber.

The black lightsaber, Darksaber, should also be mentioned. It is only featured in the Star Wars novels.

Actually, the Lightsaber's color comes from it's focusing crystal. While the Jedi used natural crystals, the Sith often used red-hued synthetic crystals.
Around 4,000 BBY, lightsaber crystals were used to indicate a Jedi's chosen class. Blue indicated a Jedi Guardian, a Jedi who used the Force on a more physical level. Green indicated a Jedi Consular, a Jedi who preferred to reflect on the mysteries of the Force and fight the dark side at its heart. Yellow indicated a Jedi Sentinel, a Jedi who honed their skills in a balance of combat and scholarly pursuits.
This distinction fell out of practice in later years when most Jedi used blue or green crystals, based on the supply on the various source worlds. Purple, yellow, and orange crystals were still used by some Jedi until the the fall of the Jedi Order, but they were exceedingly rare, and often passed down through generations.
For millennia, the Jedi Order lit lightsabers in every color and hue imaginable. However, following the Battle of Ruusan, the hues of most available crystals had been limited to either blue or green. Lightsaber color crystals could also be compressed, resulting in a pulsating blade, or they could be unstable, resulting in a core which swirled and sparkled. Well, depending on the creator or master, the colors of a lightsaber tell others what type of fighting style you are. This isn't true all the time, but most of the time. Green: Shii-Cho Blue: Soresu Red or Green: Ataru Green: Djem So Any color, but 2 lightsabers: Jar'kai The unorthodox is using more than two sabers, but that really isn't common, only if the jedi or sith was an alien species that had more than two arms or if it was General Grievous. The color of your lightsaber could also tell about your emotions, as Yoda would say to his younglings.
As seen in the star wars series, no. However, The Berkly institute has developed a contained plasma arc device that looks, sounds, and behaves much like a light saber. It is far from portable though, as it takes a massive amount of power to operate as well as equipment the size of an SUV, not a flashlight.

To change the lightsaber colors, you pause the game, then go to the customize menu. Go to lightsabers. Then select either one of the two lightsabers to change the color. The color option will be the first one while the power crystal option is the one underneath.
