While the engines themselves are hot, the Pratt and Whitney F100 series of engines are actually cool enough to touch the augmentor (aka afterburning) section even while running at full power. This is due to the bypass air cooling the engine, which also provides a cushion between the augmentor's flame trail and the engine itself. Without this cushion of air, the flame trail would burn through the engine since it reaches temperatures in excess of 2000-degrees Fahrenheit. Without the use of the augmentor, the exhaust gases reach temperatures of 800-degrees.

This is general question. Combustion temperature in jet engine is variable(depend on engine type and combustor type). For example, 1500 Kelvin for single-spool engine and 1700 Kelvin for 2-spool engine.
