They really aren't - it's that on land maps you look "down" to the ground. On sky maps you look "up" to the sky, so they APPEAR reversed. In actuality, they aren't

The maps remain the same way around the entire world. this is why cities don't have super detailed maps including Israel. it is also public information. Otherwise you would have to pay money. You can get more detailed maps by different companies, (such as mapworks inc, or mapart publishing, or rand mcnally, or something like that) and in road atlases, but for those you would have to pay money.
